For future reference

I was blog hopping and came across a recipe that looks amazing so I'm recording it here for future reference...and of course to tempt you :)

Banana Cake w/Cream Cheese Frosting
Preheat oven 350* for 20-40min
(the time varies on what pan you use)

Ingredients:
1/2 C butter
1-1/2 C Sugar
2 large eggs, beaten
2 C flour sifted (I didn't sift :)
1/2 tsp salt
1/4 tsp baking powder
1/2 C milk
1/4 tsp vanilla
3/4 tsp baking soda (add to pureed bananas)
3 pureed bananas (ripe)

***I doubled the recipe and made it like a sheet cake using a cookie sheet, their was extra and it fit in a loaf pan***

grease and flour pan
cream butter, sugar, eggs
sift flour, then add baking powder and salt
to creamed mixture add milk and flour--alternate the two starting and ending with flour
add vanilla and bananas

Pour into pan of choice and bake until golden brown on top, and insert toothpick for ungooeyness :)

Frosting:
1/2 Stick butter, softened
8 oz cream cheese, softened
1lb powdered sugar
2 tsp vanilla

beat together until smooth

(I didn't completely double the frosting when I doubled the cake, just an FYI)

Creative Meals

I'm not super creative when it comes to meals but I am a really good cook.

Give me a recipe and I'll make you a meal you'll never forget. But, sometimes when the pantry is empty (which happens way too often and way too soon after grocery shopping) I have to stretch out of my box.

Okay, I don't stretch that far lol.

Here is what we had yesterday when I opened the pantry and waited for something to jump out and make itself..



Isn't that pathetic?? Pinto beans (flavored with chili powder and cumin) w/ mozzarella, mandarin oranges, and tomato. Atleast the kids loved it :)

I need some creative ideas not just when there are no groceries but for lunch in general. Lunch is so hard to be creative with.

Give me some ideas!

Juice anyone?

YUUUUUUMMMYY!!

1 stick Rhubarb
2 stalks Bok Choy
4 leaves of Kale
2 Beets w/ leaves
3 Carrots
2 Apples
1 1/2" Ginger Root

Place in Jack LaLayne and WALLAH! You have a crimson concoction that even the kids will love. Mine are on the back porch drinking their "wine" now. It feels so good to make and drink something that is SO healthy! I can feel every cell screaming out "Thank you!". Don't be intimidated by hard, pungent greens. By adding ginger and apples to any juice makes it sweet and spicy. Just perfect!

The other day I wanted to juice but was very limited on ingredients. So in case you ever wondered Celery, Broccoli, Apple and grapes make a "celery-ific" juice. I'm afraid that anything that contains even a string of celery will predominantly taste like celery. I liked it, the kids didn't.

Here is some new found info on these veggies:

Beets
Bok Choy : Bok choy has a mild flavor and a higher concentration of vitamin A.
Rhubarb
Carrots
Kale
Ginger
Broccoli
Celery
